Proteins produced through microbial fermentation offer the possibility of producing far more product per surface area than from other uses of arable land. Animals or even the production of pulses generate waste (leaves, stems) but fermentation uses everything. Fermentation also uses less water than crops.
Many plant based proteins lack one or several amino acids and often vitamins, all of which are necessary for a healthy diet. Microbial fermentation can help enrich the biomass in a target molecule and increase the bioavailability of minerals such as iron or zinc.
